Homemade Bread Recipe
From start to finish in approximately one hour
Yield 2 Loaves
5 1/4 Cups white “bread flour” or wheat flour (do not use all purpose)- can be found at any grocery store
1/4 Cup sugar
1/2 tablespoon salt
1 1/2 rounded tablespoons of saf-“instant” yeast- I used Fleischmann's RapidRise Yeast
1 1/2 tablespoons liquid lecithin
2 cups hot tap water
Using a stand mixer with a dough hook, Mix dry ingredients. Add *lecithin and water. Mix for 1 min and check consistency. Dough should be soft to touch- no dough should come off your finger when you touch it. If dough is too dry, add more water. If dough is too moist, add more flour. Mix for 5 minutes. (Do not add water or flour to the dough after it has finished mixing. Spray counter and pans with Pam. Spray your hands and anything else that touches the dough with Pam spray. Cut dough in half with knife. Shape loaves and cover with a dish towel. Let raise for 25 minutes. Bake at 350 for 25 minutes.
*Squeeze or pour approximately 3 tablespoons of lecithin directly into the bowl. Do not measure! Too sticky!!
Note: For whole wheat bread, use the same recipe but add one cup of applesauce as part of the hot tap water. Mix for ten minutes.

The finished product

Mmmmm pizza. When using for pizza the dough DOES NOT have to rise. Just bake at 400 degrees for 18 minutes. Takes LESS THAN AN HOUR... if you have the toppings ready.
